Hotel teams up with Dark Art Distillery

A great collaboration- Dark Art Distillery in Kirkcudbright home to the award winning Sky Garden Gin have joined forces with us in a unique collaboration using the botanicals from the gin making process to allow Head chef Ryan Millar to create a Gravalax style Salmon starter called Dark Art cured Salmon. The botanicals include juniper, coriander seed, peppercorn and mint .After a month or so of testing the recipe the hotel will launch this unique dish on its summer menu in June.

Distillery’s head distiller, Fiona Williamson said “ This just takes our journey of using every part of the gin making process full circle in sustainability, leaving nothing to waste. We are delighted our spent botanicals can be used to create recipes.”

Head chef Ryan Millar added “The intensity of the flavours from the spent botanicals add a unique flavour to our cured salmon dish. We are delighted to be collaborating with another local business in this way, it really does showcase locally produced food.”
