Arrive Friday Night 18th October - check in from 2pm - explore Kirkcudbright at your own pace, a visit to the shops and Galleries ?
Saturday19th October - after a hearty full Scottish breakfast meet at the Cookery School at 10am
You will start your day at Gledpark, a UNESCO certified producer of park venison. Discover how native deer in their home range are managed with welfare as a core motivation in the breeding of these iconic animals. Learn their life cycle, witness natural behaviours and freedoms and discover why most are destined to go live to other locations in the UK as breeding stock. Having got up close and personal you will understand the science behind the growing fashion driving Venison consumption. Cameras are a must, we’ve timed this day to coincide with the ‘Rut’.
After your tour, you will have lunch at the Award Winning Station House Cafe. Post lunch you will be treated to a demonstration of venison cookery from the Cookery School’s owner Nick Morris. He will demonstrate how to prepare and cook different cuts and explain why they need different techniques.
The final element of the day sees you with your own dedicated workstation in our purpose built student kitchens – where you will prepare a delicious venison dish yourself.
A full day which will build your confidence in the ethicacy of our traditional game and your ability to do it justice in your own kitchen.

A taste of Dumfries and Galloway at Station House cookery School
Friday 8th and Saturday 9th November
This is an amazing experience which showcases what an incredible region Dumfries and Galloway is for food and drink.
Arrive and check in for 1pm at the Hotel on Friday 8th November, a quick cuppa or a bite to eat then it’s off to The Station House Cookery School ( 5 mins walk ) for 2pm
You begin with a cookery demonstration on Friday afternoon at 2pm where Nick will guide you through a selection of dishes which use a variety of delicious ingredients from the region. Expect to find Venison, Scallops, Hogget, Galloway Cream and Honey amongst many other local delights. Nick will tell you all about their provenance and the people who are responsible for producing them.
Back to the hotel for 6pm - choose your venue for dinner either eat casually in the bar area or reserve a table in Artisitas restaurant.
After a hearty full Scottish breakfast on the Saturday morning it’s back to the Cookery School for 10am
Then on Saturday morning at 10.00am you return to the kitchens and recreate the dishes of your choice to sit down to at a communal meal with your fellow students.
You finish the experience with a final demonstration again using local ingredients which focuses on desserts which you then get to taste to round off your day in style around 5pm.
Enjoy a relaxing evening in one of our bars or lounges, your choice of dining venue again before retiring bed to dream about all those dishes you’ve made !!
Sunday morning wake up to a full Scottish breakfast before check out at 11am - maybe spend the rest of the day exploiting our wonderful town and galleries before heading home.
