12OZ CASTOR SUGAR
JUICE ½ A LEMON
2 PUNNETS RASPBERRIES
SPONGE BASE
CREAM OF GALLOWAY LEMON CURD ICE CREAM
STOCK SYRUP
1/ CUT SPONGE INTO A RETANGULAR SHAPE
2/ BRUSH WITH STOCK SYRUP
3/ PLACE RASPBERRIES ON THE BASE. FREEZE.
4/ COVER THE RASPBERRIES WITH Cream of Galloway LEMON CURD ICE CREAM
5/WHISK UP THE EGG WHITES TILL LIGHT AND FLUFFY. GRADUALLY ADD THE SUGAR , AND ADD THE LEMON JUICE LAST
6/ PIPE ONTO THE BASE. AND PLACE BACK INTO THE FREEZER UNTIL YOU ARE READY TO SERVE.
7/BAKE IN A HOT OVEN TILL GOLDEN BROWN

500 ML WHIPPED DOUBLE CREAM
500G OF SOFT FRUIT ( WHY NOT TRY FRESH RASPBERRIES INSTEAD OF STRAWBERRIES)
CREAM OF GALLOWAY VANILLA ICE CREAM
SLIGHTLY CRUSH THE MERINGUE AND ADD TO THE BERRIES AND THE CREAM.
ADD A TWIST WITH CREAM OF GALLOWAY VANILLA ICE CREAM
